For now, I would not fully replace flours with lentil flour, maybe 1/2 cup at a time. It does absorb quite well, but lentil flour is quite strong in taste, and to me is quite "grainy." Reminds me a lot of whole wheat flour. Hope that helps! I should add, I use a mixture of lentil flour and coconut flour to help balance .
